This is a great Swedish recipe for cured cucumbers. They are served chilled as a condiment that may compliment any tapas. I think these are so much better than pickles because they are crunchy with a very subtle flavor.
- 1/2 cup white vinegar
- 1 1/4 cup water
- 1/2 cup sugar
- Chopped Italian parsley or Dill
- 1 English Cucumber or homegrown cucumber, thinly sliced
In a large bowl, add the vinegar, water, sugar, and Italian parsley or Dill. Stir and set aside. Rake the cucumbers lengthwise with a fork (a nice, decorative touch). Thinly slice the cucumbers and add to the vinegar mixture. Chill and serve!
